Time for some vitamins! Super easy salad for you to enjoy for your lunch, dinner or as a side!
INGREDIENTS:
ROASTED BEETROOT PESTO
2 Large Beetroots, roasted or grilled, must be soft
1/3 cup Tahini paste
3 Tablespoons of Avocado oil
1 Tablespoon of Nutritional Yeast
1 Tablespoon of Nuzest Clean Lean Protein, Turmeric Maca Chai or plain
Pinch Cayenne pepper
1/2 Lemon juiced **optional
1-2 Tablespoons of coconut cream or macadamia nut butter **Optional too
1/2 Teaspoon dried herbs **optional
SALAD MIX: (2 pax)
Bean sprout salad mix
Avocado oil
Lemon Juice
Black sesame seeds
**Optional to add some sliced avocado or cauliflower breadsticks
INSTRUCTIONS:
Roast or grill the beetroot until soft, blend all the ingredients for the pesto together, the salad mix gently stir fry in Avocado oil for 6 min.
Sprinkle with pine nuts or sesame seeds. Drizzle a little of your beetroot pesto dressing, serving 2 pax.
