Antioxidant Citrus Burst Salad

We can’t get enough of C-vitamin and iron at this time when your immune system needs more help than ever. And this easy salad won’t just make your insides happy, but your eyes and tastebuds!

INGREDIENTS:

Easy quick step by step Citrus salad:

✽ 1 Orange sliced

✽ 1 Grapefruit

✽ 4 Pieces of Fresh Mint

✽ 200g mixed greens, some celery along with a lot of added tomatoes.

DRESSING:

✽ 1 Passion Fruit (Pulp)

✽ 2 Teaspoons Yacon syrup

✽ 1 Whole Lemon juiced

✽ 1 Tablespoon of Orange juice

DIRECTIONS:

Use at least 3-4 stalks of celery, slice them in various different ways. I kept some sliced finely and some diagonally, the cut of the fruit or vegetable actually allows for a different taste and texture each time you crunch on your antioxidant boosting salad.

Feel free to cut the citrus fruits the way you feel, ensure to remove the pips.

I would also recommend using various different greens, especially by adding some dark rich spinach to the mix, (baby spinach) the citrus will allow the rich goodness of spinach to become bioavailable. This will make the iron content within the spinach easier to absorb and you will get the maximum benefit from your plant foods.

Marrying certain food groups together not only allows for them to become bioavailable but also allows for easier digestion.
