Baked salmon with garlic and coriander

All fish contain the beneficial omega-3 fatty acids that are essential for the body’s function, but oily fish contains far more than white fish, and salmon contains more than most.

Fish oil are highly beneficial for the heart and help to fight cancer, particularly breast and bowel cancers. Moreover, fish oils are “brain food” and including salmon in the diet can improve memory and brain function and can also help with depression because of fish oils ability to affect our serotonin levels .

Choosing a salmon is very dependent on where you live. If you have the choice, choose wild and organic salmon over farmed varieties. Leaner and firmer, these fish contain none of the dyes, antibiotics, or growth hormone residue found in many farmed fish. However, in Singapore, the ASC certified farmed atlantic salmon is also recommended.

OVEN BAKED SALMON  WITH GARLIC AND CORIANDER

600- 800 g fresh, skin-on salmon fillet

1 small bunch of fresh coriander leaves

1 small bunch of Italian/flat parsley

3 garlic cloves peeled and chopped

1 organic lemon

4 tbsp olive oil

sea salt and pepper

Wash and dry the parsley and coriander and chop both. Place the  herbs in a bowl with garlic and finely grated lemon zest.

Add olive oil and combine. Spread the mixture over the salmon fillet and season with salt and pepper.

Preheat the oven to 180 C. Place the fish in an ovenproof pan. Wet a piece of baking paper and place it over the fish. Bake the salmon in the oven for 30 minutes.
